Tuesdays Tasties

Chocolate Swirl Cheesecake

What you need:
* 1 3/4 cups finely crushed graham crackers
* 1/4 cup finely chopped walnuts
* 1/2 teaspoon ground cinnamon
* 1/2 cup butter, melted
* 3 8-ounce packages cream cheese, softened
* 1 cup sugar
* 2 tablespoons all-purpose flour
* 1 teaspoon vanilla
* 2 eggs
* 1 egg yolk
* 1/4 cup milk
* 2 ounces semisweet chocolate

Let's make it:
* For crust, combine crushed graham crackers, walnuts, and cinnamon. Stir in melted butter. Press the crumb mixture onto the bottom and about 2 inches up side of an 8-or 9-inch springfoam pan. Set pan aside.


For filling, in a large mixing bowl beat cream cheese, sugar, flour and vanilla with an electric mixer until combined. Add eggs and egg yolk all at once, beating on low speed just until combined. Stir in milk. In a seperate bowl melt 2 ounces of semisweet chocolate. Stir the melted chocolate into half of the filling.




Pour chocolate filling into crust; pour plain filling into the crust.


Using a spatula, gently swirl filling.


Place on shallow baking sheet in oven. Bake in a 375 oven for 45-50 minutes for the 8-inch pan, 35 to 40 minutes for the 9-inch, or until center appears nearly set when shaken.

Since strawberries aren't in season anymore but they taste so good with cheesecake I went and bought frozen strawberries. I left them out on the counter so they were completely defrosted and then drizzled the juice over individual pieces. That way you also have pieces of strawberries if your guest would like those as well.
