Chicken Rice Burritos
Cook 2 cups of chicken breast and shred into pieces. Add to shredded chicken, 1/4 cup chicken broth, 1 tablespoon of chili powder and 3/4 cup Picante sauce. Mix thoroughly and set aside.
In a sauce pan, mix 1/2 cup white rice and 1 1/4 cups chicken broth- cover and cook on medium to medium high heat until most of the chicken broth is absorbed, you will need to watch it and stir occasionally so the rice doesn't stick to the pan. Then add 1/2 cup Picante Sauce and simmer again until most of the liquid is absorbed, turn heat down a little and again watch and stir, usually takes about 5 minutes.
Stir rice mix into chicken , mix. Add 1 1/2 cups shredded cheese to the chicken and rice mix, stir well so cheese melts. Place mixture onto flour tortillas and roll up like burritos. If you use the smaller tortillas you should get about 8, larger you will get more around 4. Bake for 10 minutes or until corners of tortilla are browning and getting crunchy at 375 on an ungreased baking sheet.
One of our favorites around here, even BOTH the girls ate it last night, now that tells you something right there.
